Chicken Strogonoff

  • Black pepper, to taste
  • 2 big ones Chicken breasts
  • 1 Chicken stock cubes
  • 290 g Creme Fraiche Low Fat
  • Cumin, to taste
  • 200 g Mushrooms
  • 2 chopped Onions
  1. Put the onions in a blender until chopped into small pieces.
  2. Put this onion mash in a pot and let it warm a bit.
  3. Cut the chicken breasts into cubes and add to the onion and stir.
  4. Add the chicken bouillon and the ground black pepper.
  5. Let it cook on low heat, adding water if needed (little by little) so the juice does not dry. The chicken will release juices too, so be careful to do not add too much water.
  6. Add the mushrooms, if they are raw, if they are preserved, add at the end.
  7. When the chicken is cooked, make sure there is not a lot of liquid. In this case, let it dry a bit before adding the creme.
  8. Add the creme fraiche, stir, let it boil a little, taste to see if more salt is needed.

Chocolate Mousse Supreme

  • 2 tablespoons Cocoa powder (low fat, unsweetened)
  • 290g Creme Fraiche Low Fat
  • 3 Eggs
  • 12 g Gelatin
  • 5 tablespoons Hot water
  • 3 to 4 tablespoons Sweetener
  1. Add the hot water to the gelatin and stir very well with a mixer or by hand.
  2. Add the cocoa powder and stir well, do not leave lumps. Set aside to cool.
  3. Meanwhile, separate the egg yolks and whites.
  4. Beat the whites into peaks and add the sweetener, mixing well. Beat the egg yolks and add to the cocoa mixture.
  5. Add the cocoa mixture to the egg whites and fold them together gently.
  6. Add the cream and fold it in, carefully. Let it cool in the refrigerator until it gets firm.

Chinese-Style Tomato Egg Stir Fry

Chinese-Style Tomato Egg Stir Fry

  • 2 Egg whites
  • 1 Egg
  • 10 g Green Onions with Tops, chopped
  • Parsley (if wished)
  • Salt & Pepper to taste
  • 2 tbsp Soy sauce (low sodium)
  • 1 tsp Stevia
  • 2 medium Tomatoes
  1. Cut tomatoes in cubes. Cut the green onions.
  2. Beat eggs in a bowl.
  3. Spray a pan with olive oil.
  4. Scramble eggs and do not over cook.
  5. Get the egg out into the original bowl.
  6. Spray the pan with oil again, add the cut green onions. Stir until slightly cooked.
  7. Add tomato cubes and soy sauce, salt, and stevia powder. Cook until tomatoes are softened.
  8. Add scrambled eggs back, mix well.
  9. On hight heat (check the max temperature for your non-stick pans) cook away extra juice.
  10. Decorate with a piece of parsley. Serve hot.

Broccoli Bacon Mozzarella Bake

Broccoli Bacon Mozzarella Bake

  • 50ml 99% Fat Free Chicken Broth
  • 750 g Broccoli
  • 125 g FF Mozzarella
  • 1 Tbsp italian seasoning
  • 100 g low fat bacon
  • 1 Tsp Paprika spice
  • salt and pepperto taste
  1. Preheat the oven to 350F.
  2. Prepare the broccoli and boil it in the chicken broth (add water if necessary) until softened, move it into a shallow baking tray. Or if using frozen ones, de-freeze ahead of time and directly bring into baking tray and pour chicken broth in together.
  3. Cut the FF mozzarella cheese into thin pieces and place on top of the broccoli.
  4. Sprinkle low fat bacon cubes [turkey bacon can work nicely] and all the spices and seasoning.
  5. Simply bake for about 20 min.

Turkey Salad Brunch

Turkey Salad Brunch

  • 8-10 grape tomatoes, quartered
  • 2 tablespoons Greek yogurt (fat free)
  • 1 or 2 Large Egg
  • 3 tablespoons liquid egg whites
  • 2 tablespoons Oat bran
  • Olive Oil Spray (as needed in cooking)
  • Rosemary (large sprig, minced)
  • handful spinach, shredded
  • 2 slices turkey, deli-chopped
  1. Make the Rosemary Galette by foaming the egg whites in a bowl.
  2. In a separate bowl, mix together yogurt, oat bran and rosemary.
  3. Add the foamed eggs and mix until it is no longer lumpy.
  4. Spray a flat pan with olive oil spray and pour mixture on pan spreading it out as much as possible.
  5. Cook each side until golden on medium heat. Top side will dry out before flipping.
  6. Remove galette and let cool.
  7. Prepare turkey, spinach and tomatoes.
  8. Spray pan with olive oil spray and cook egg/s over easy or to desired doneness.
  9. Once galette is cool, top it with turkey, spinach and tomatoes. Then top with cooked egg/s.
