Easy Meat Loaf

  • 4 tbs Diet ketchup (sugar free)
  • 2 tbs Dijon mustard
  • 1 Eggs
  • 500g Lean minced meat
  • 1/4 cup Oat bran
  • 1 chopped Onion
  1. Pre-heat the oven to 375F/190C.
  2. Chop the onion.
  3. Beat the egg.
  4. Combine all main ingredients in a bowl except for 2 tbs of ketchup and the 2 tbs dijon mustard.
  5. Form mixture in a loaf pan.
  6. Combine the last 2 tbs of ketchup and 2 tbs dijon mustard and brush over the meat loaf.
  7. Cook in oven for approximately 1 hour 15 mins.

Vanilla Pudding

Vanilla Pudding

  • 1 tbsp Artificial Sweetener
  • 2 Eggs
  • 500 g Quark
  • 250 ml Skimmed milk
  • 1 tbsp Vanilla extract
  1. Beat up the two eggs.
  2. Add the milk and the vanilla extract.
  3. Add the quark and beat up until smooth.
  4. Put some sweetener in as needed.
  5. You can also make it with vanilla yoghurt or vanilla flavoured milk.
  6. You can also add oat bran and/or wheat bran.

Really Tasty Oat Bran Bread

Really Tasty Oat Bran Bread

  • 1 Tsp Bicarbonate of soda
  • 8 ozs (11 Tbsp) Oat bran
  • 1 Tsp Salt
  • 125 ml Skimmed milk
  • 2 Tbsp Wheat Bran
  • 125 ml (1 cup) Yogurt (fat free)
  1. Mix together all the dry ingredients then add the yogurt and milk to make a spongy light mixture.
  2. Add more milk if it is too dry.
  3. Lightly oil a mini bread tin and fill with the mixture.
  4. Smooth the top and put in an oven at 200C for 20-25 mins.
  5. Turn out and slice when cool.

Simple Broccoli

Simple Broccoli

  • 1 bunch Broccoli
  • 3 Garlic clove
  • 2-3 Tbsp Lemon juice
  • Salt & Pepper to taste
  1. Wash and cut the broccoli into small florets.
  2. Chop the garlic cloves.
  3. Fry on high heat the broccoli and garlic together for about 1-2 minutes. Be sure to stir vigorously, as to not burn the contents of the pan.
  4. Put the pan aside and cover with a lid for 5 minutes to let it steam.
  5. Season with the lemon juice, and salt & pepper just before serving.

Lettuce Bites

Lettuce Bites

  • 120 g Cream cheese (fat free)
  • Crushed black pepper to taste
  • 1 tbsp chopped dill
  • 2 little gem lettuce heart
  • 50 g cooked roughly chopped prawns
  • 1 medium tomato
  1. Divide the lettuce into 8 individual leaves, wash and pat dry.
  2. Mix the low fat cream cheese with the tomato, dill and pepper and place a spoonful onto each leaf.
  3. Top with the prawns.
  4. Serve 2 leaves per person as a light lunch or starter or serve as part of a buffet.
